1. Cleaning the Fish
Rinse the jackfish under cold water and pat it dry with paper towels. Remove the scales and guts carefully.
2. Marinating the Fish
In a bowl, combine salt, rice vinegar, soy sauce, sesame oil, grated ginger, and minced garlic. Place the cleaned jackfish in the marinade and let it sit for about 30 minutes.
3. Grilling the Fish
Preheat a grill or grill pan over medium heat. Remove the fish from the marinade and place it on the grill. Grill each side for about 4-5 minutes or until the fish is cooked through and has nice grill marks.
4. Serving
Once grilled, remove the fish from the grill and let it rest for a few minutes. Garnish with sliced lemon and chopped green onions before serving.
