1. Prepare the Base
In a blender or food processor, add the eggs, white vinegar, Dijon mustard, salt, and sugar.
2. Blend
Blend on medium speed for about 30 seconds until the mixture is well combined.
3. Add Oil
With the blender running, slowly drizzle in the vegetable oil. This should take about 2-3 minutes. The mixture will thicken as you add the oil.
4. Taste and Adjust
Once all the oil has been incorporated, taste the mayonnaise and adjust seasoning if necessary.
5. Store
Transfer the mayonnaise to a clean jar or container and refrigerate. It should last about a week.
