1. Prepare the Potatoes
Wash and peel the Idaho® potatoes and sweet potatoes. Cut them into evenly sized sticks, about 1/4 inch thick.
2. Soak the Potatoes
Place the cut potatoes in a bowl of cold water and let them soak for at least 30 minutes to remove excess starch. This helps in achieving a crispier fry.
3. Heat the Oil
In a deep fryer or a large pot, heat the vegetable oil to 350°F (175°C). Use a thermometer for accuracy.
4. Fry the Potatoes
Drain the soaked potatoes and pat them dry with a clean towel. Fry the Idaho® potato sticks in batches for about 5-7 minutes or until golden brown and crispy. Remove and drain on paper towels.
5. Fry the Sweet Potatoes
Repeat the frying process with the sweet potato sticks, frying them for about 4-6 minutes or until they are golden brown.
6. Season and Serve
Season both the fries and the sweet potato fries with salt and pepper to taste. Serve hot.
