    Prepare the Potatoes

    Wash and peel the Russet potatoes. Slice them thinly using a mandoline or sharp knife, aiming for about 1/8 inch thickness.

    Soak the Slices

    Place the potato slices in a large bowl of cold water. Let them soak for at least 30 minutes to remove excess starch, which will help them crisp up.

    Heat the Oil

    In a deep pot or fryer, heat the vegetable oil to 350°F (175°C). Use a thermometer for accuracy.

    Fry the Chips

    Carefully add a handful of potato slices to the hot oil, ensuring not to overcrowd the pot. Fry for about 3-4 minutes or until golden brown.

    Drain and Season

    Use a slotted spoon to remove the chips from the oil and place them on a paper towel-lined plate to drain excess oil. Sprinkle with sea salt, paprika, garlic powder, and black pepper while still hot.

    Repeat

    Continue frying the remaining potato slices in batches until all are cooked and seasoned.

    Serve the housemade potato chips warm or at room temperature in a bowl or platter.
