Preparation

Prepare the Salmon
Heat a pan over high heat. Sear the salmon fillet for 1-2 minutes on each side until browned but still rare in the center. Remove from heat and let it cool slightly. Slice thinly against the grain.

Make the Vinaigrette
In a small bowl, mix the soy sauce and wasabi paste until well combined. Set aside.

Prepare the Vegetables
Thinly slice the cucumber and radishes. Wash the tatsoi leaves and dry them gently.

Assemble the Dish
On a plate, arrange the tatsoi leaves as a bed. Lay the sliced salmon on top, followed by the cucumber and radish slices. Drizzle with shiso oil and the soy-wasabi vinaigrette.

Add Garnishes
Top with jalapeño mayo and sprinkle with tenkasu. Add the Japanese pickles on the side.
