Preparation

    Prepare the Seafood

    In a skillet, melt a small amount of butter over medium heat. Sauté the shrimp and scallops until cooked through, about 3-4 minutes. Remove and set aside.

    Cook the Mushrooms and Peas

    In the same skillet, add more butter and sauté the shiitake mushrooms until soft. Stir in the peas and cook for another 2 minutes. Season with salt and pepper.

    Make the Mornay Sauce

    In a saucepan, melt 50 grams of butter. Stir in the flour to make a roux and cook for 2 minutes. Gradually whisk in the milk, cooking until the sauce thickens. Remove from heat and stir in the grated cheese, nutmeg, salt, and pepper.

    Prepare the Duchess Potatoes

    Pipe the duchess potatoes onto a baking sheet and bake at 200°C (400°F) for 15-20 minutes or until golden.

    Prepare the Fried Bread

    Fry the slices of French bread in a pan with a little butter until golden and crispy on both sides.

Assembly

    Combine and Serve

    In a serving dish, layer the sautéed seafood, mushrooms, and peas. Pour the Mornay sauce over the top and serve with the baked duchess potatoes and fried bread on the side.
