Cake Preparation

    Preheat the Oven

    Preheat your oven to 350°F (175°C). Grease and line a baking sheet with parchment paper.

    Mix Dry Ingredients

    In a large bowl, whisk together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.

    Combine Wet Ingredients

    In another bowl, combine the vegetable oil, applesauce, vanilla extract, and almond milk.

    Combine Everything

    Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix.

    Bake the Cake

    Spread the batter evenly onto the prepared baking sheet. Bake for 20-25 minutes or until a toothpick inserted into the center comes out clean.

    Cool the Cake

    Once baked, remove from the oven and allow to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Filling Preparation

    Prepare the Filling

    In a bowl, combine the strawberry puree, coconut whipped cream, and powdered sugar until smooth.

    Add Strawberries

    Gently fold in the sliced fresh strawberries into the filling mixture.

Assembly

    Assemble the Bûche

    Once the cake is completely cool, spread the filling evenly over the cake and carefully roll it up from one end to the other.

    Chill

    Wrap the rolled cake in plastic wrap and refrigerate for at least 1 hour to set.

    Decorate

    Remove the cake from the refrigerator, cover it with dark chocolate ganache, and decorate with pine sprigs and a dusting of powdered sugar.
