Cook the Meat
In a skillet over medium heat, cook the ground beef or chicken until browned. Drain excess fat if needed. Add taco seasoning and a splash of water, stirring to combine. Cook for an additional 5 minutes, then remove from heat.

Prepare the Tortillas
In a separate pan, heat a small amount of cooking oil over medium heat. Lightly fry each corn tortilla for about 30 seconds on each side until soft and pliable. Remove and place on paper towels to drain.

Assemble the Tacos
Take a softened tortilla, add a spoonful of the meat mixture, and sprinkle shredded cheese on top. Roll the tortilla tightly to form a taco finger.

Fry the Taco Fingers
In the same skillet used for the tortillas, add more oil if needed and heat. Fry each rolled taco finger seam-side down for about 2-3 minutes on each side until golden brown and crispy. Remove and drain on paper towels.

Serve hot with sour cream, salsa, chopped lettuce, and diced tomatoes on the side.
