1. Prepare the Dough

In a large mixing bowl, combine the all-purpose flour, baking powder, salt, and sugar. Mix well. Add vegetable oil and gradually pour in water, stirring until a dough forms.

2. Knead and Rest

Knead the dough on a floured surface for about 5 minutes until smooth. Cover with a cloth and let it rest for 30 minutes.

3. Make the Soup Base

In a large pot, heat the chicken broth over medium heat. Add the chopped onion, diced carrots, and celery. Cook until the vegetables are tender, about 10-15 minutes.

4. Add Chicken and Vegetables

Stir in the shredded chicken, corn, and peas. Season with black pepper and cook for an additional 5 minutes.

5. Roll and Cut the Dough

After resting, roll out the dough to about 1/8 inch thickness. Cut into circular shapes about 3 inches in diameter to form the sopas.

6. Cook the Sopas

Drop the cut sopas into the simmering soup and cook for about 10 minutes, or until they float to the surface and are cooked through.

7. Serve

Ladle the soup with sopas into bowls and garnish with fresh parsley. Serve hot.
