After resting, roll out the dough to about 1/8 inch thickness. Cut into circular shapes about 3 inches in diameter to form the sopas.
6. Cook the Sopas
Drop the cut sopas into the simmering soup and cook for about 10 minutes, or until they float to the surface and are cooked through.
7. Serve
Ladle the soup with sopas into bowls and garnish with fresh parsley. Serve hot.
