Cheese Enchilada

    Prepare the Enchiladas

    Preheat the oven to 350°F (175°C). In a skillet, heat some enchilada sauce. Soften corn tortillas in the sauce, fill with cheese and onions, roll, and place in a baking dish. Pour remaining sauce over the enchiladas and top with extra cheese.

    Bake

    Cover the dish with foil and bake for 20-25 minutes until heated through. Remove foil and bake for an additional 5 minutes to melt cheese.

Beef Taco

    Cook the Beef

    In a skillet, cook ground beef over medium heat until browned. Drain excess fat and add taco seasoning with a little water. Simmer for 5 minutes.

    Assemble Tacos

    Fill taco shells with beef, lettuce, diced tomatoes, and cheese. Top with sour cream.

Red Chile Pork Tamale

    Prepare the Pork

    Cook pork shoulder in a slow cooker with red chile sauce on low for 8 hours or until tender. Shred the pork.

    Make the Tamale Dough

    Combine masa harina, chicken broth, and a pinch of salt in a bowl. Mix until a dough forms.

    Assemble Tamales

    Soak corn husks in warm water. Spread masa dough on each husk, add shredded pork, fold and tie. Steam tamales for about 1 hour.
