    Prepare the Peppers

    Preheat the oven to 375°F (190°C). Carefully roast the poblano peppers until the skin is blistered and charred, about 15 minutes. Place them in a plastic bag to steam for 10 minutes, then peel off the skin and remove the seeds.

    Cook the Filling

    In a skillet, heat olive oil over medium heat. Add chopped onion and sauté until translucent, then add minced garlic and ground beef. Cook until the beef is browned, seasoning with cumin, chili powder, salt, and black pepper.

    Add Cheese

    Remove the skillet from heat and stir in the shredded cheddar cheese until melted and well combined.

    Stuff the Peppers

    Carefully stuff each roasted poblano pepper with the beef and cheese mixture, ensuring they are filled generously.

    Place the stuffed peppers on a baking sheet and bake in the preheated oven for 20-25 minutes until heated through and the tops are slightly golden.
