Seafood Enchiladas
Method
Preparation
- 1
Prepare the Filling
In a large bowl, combine the imitation crab meat, bay shrimp, garlic powder, cumin, salt, and black pepper. Mix well.
- 2
Prepare the Tortillas
In a skillet over medium heat, warm the corn tortillas one at a time until they are pliable.
- 3
Assemble the Enchiladas
Place a generous amount of the seafood mixture in the center of each tortilla. Roll them up tightly and place them seam side down in a greased baking dish.
- 4
Make the Sauce
In a separate bowl, mix together the cream of mushroom soup and green chile sauce until well combined.
- 5
Bake
Pour the sauce over the filled enchiladas, ensuring they are well covered. Sprinkle shredded cheese on top. Bake in a preheated oven at 350°F (175°C) for 25-30 minutes or until the cheese is bubbly and golden.
- 6
Serve
Remove from the oven and let them cool slightly. Top with sour cream and chopped green onions before serving.
