Make the Syrup
In a saucepan, combine the water, brown sugar, and granulated sugar. Stir over medium heat until the sugars are fully dissolved.

Add Flavoring
Add sassafras bark, sarsaparilla root, vanilla extract, and wintergreen leaves to the saucepan. Bring to a boil, then reduce heat and simmer for 15 minutes.

Strain the Mixture
Remove the saucepan from heat and strain the mixture through a fine mesh sieve into a bowl to remove solids. Allow the syrup to cool.

Ferment the Syrup
Once the syrup is cool, sprinkle the yeast over it and stir well. Cover the bowl with a clean cloth and let it sit at room temperature for 1-2 hours until it starts to bubble.

Pour the syrup into clean bottles, leaving some space at the top. Add carbonated water to each bottle and seal tightly.
