    Prepare the Rice

    In a large pot, heat the olive oil over medium heat. Add the chopped onion and bell pepper, and sauté until softened, about 5 minutes.

    Add Aromatics

    Stir in the minced garlic, diced tomato, cumin, paprika, and salt. Cook for another 2-3 minutes until fragrant.

    Cook the Rice

    Add the rice to the pot, stirring to coat it with the vegetable mixture. Pour in the vegetable broth, bring to a boil, then reduce heat to low. Cover and simmer for 18-20 minutes, or until the rice is cooked and liquid is absorbed.

    Prepare the Beans

    If using canned black beans, rinse and drain them. In a small saucepan, heat the beans over medium heat until warmed through. If using refried beans, heat them according to package instructions.

    Serve

    Fluff the rice with a fork and serve it alongside the black beans or refried beans. Enjoy your rice, beans, or papitas!
