    Prepare the Red Chile Sauce

    Soak the dried red Chile peppers in hot water for about 20 minutes until they soften. Drain and remove stems and seeds.

    Blend the Sauce

    In a blender, combine the soaked Chile peppers, vegetable broth, minced garlic, cumin, salt, and black pepper. Blend until smooth.

    Cook the Base

    In a large pot, heat a small amount of oil over medium heat. Add the diced onion and sauté until translucent. Pour the blended red chile sauce into the pot and simmer for about 15 minutes, stirring occasionally.

    Serve

    Ladle the Red Chile into a 16 oz. bowl. Serve with two tortillas on the side. Optional: Add cheese on top, or offer ground beef, shredded chicken, or beans as toppings.
