Prepare the Beans
Rinse the pinto beans under cold water. If using dried beans, soak them overnight in water to soften.

Cook the Beans
In a large pot, add the soaked pinto beans and 4 cups of fresh water. Bring to a boil, then reduce heat to low and simmer for about 1 to 1.5 hours or until beans are tender.

Add Sofrito
Once the beans are tender, stir in the sofrito and salt. Cook for an additional 15-20 minutes, allowing the flavors to meld together.

Drizzle with olive oil before serving. Adjust salt to taste.
