    Prepare the Ingredients

    Dice the pork shoulder, peel and dice the potatoes, and chop the onion and garlic.

    Sauté the Pork

    In a large pot, heat olive oil over medium heat. Add the diced pork and sauté until browned on all sides.

    Add Vegetables

    Add the chopped onion and minced garlic to the pot and cook until the onion is translucent.

    Combine Ingredients

    Stir in the diced potatoes, roasted green chiles, chicken broth, cumin, salt, and black pepper. Bring to a boil.

    Simmer the Stew

    Reduce heat to low, cover, and let it simmer for about 1 hour or until the pork is tender and the potatoes are cooked through.

    Puree the Stew

    Using an immersion blender, puree the stew until smooth. If you don’t have an immersion blender, carefully transfer the stew in batches to a regular blender and blend until smooth.

    Serve

    Ladle the stew into bowls and serve with warm tortillas on the side. Add shredded cheese on top if desired.
