    Prepare the Papitas

    In a medium skillet, heat 1 tablespoon of vegetable oil over medium heat. Add the diced papitas and cook until golden and crispy, about 10-12 minutes. Season with salt and pepper. Remove from skillet and set aside.

    Cook the Beans

    In the same skillet, add the black beans and heat through for about 5 minutes. Add salt and pepper to taste. Keep warm.

    Cook the Eggs

    In another skillet, heat the remaining tablespoon of vegetable oil over medium heat. Crack the eggs into the skillet and cook to your desired doneness (sunny side up is traditional for huevos rancheros).

    Warm the Tortillas

    In a dry skillet, warm the corn tortillas for about 30 seconds on each side until pliable.

    Assemble the Dish

    To serve, place two tortillas on each plate. Top with a portion of black beans, followed by the cooked eggs. Generously spoon the red or green chile sauce over the top. Add the crispy papitas on the side and garnish with fresh cilantro.
