    Marinate the Meat

    In a bowl, combine the sliced beef or chicken with olive oil, fajita seasoning, salt, and black pepper. Mix well and let it marinate for at least 20 minutes.

    Cook the Vegetables

    In a skillet over medium heat, add a little olive oil and sauté the sliced bell peppers and onions until they are soft and slightly caramelized, about 5-7 minutes. Remove from skillet and set aside.

    Cook the Meat

    In the same skillet, cook the marinated beef or chicken over medium-high heat until fully cooked, about 7-10 minutes.

    Assemble the Quesadillas

    Lay one tortilla in the skillet, sprinkle half of the shredded cheese on one half of the tortilla. Add a portion of the cooked meat and sautéed vegetables on top of the cheese, then sprinkle some more cheese on top. Fold the tortilla over to create a half-moon shape.

    Cook the Quesadillas

    Cook the quesadilla for about 3-4 minutes on each side or until the tortilla is golden brown and the cheese is melted. Repeat with the remaining tortillas and filling.

    Slice the quesadillas into wedges and serve hot with guacamole, sour cream, and salsa on the side.
