    Prepare the Papitas

    In a skillet, heat olive oil over medium heat. Add diced papitas and season with salt and pepper. Cook until golden brown and tender, about 15 minutes. Stir occasionally.

    Assemble the Enchiladas

    Preheat your oven to 375°F (190°C). In a large bowl, mix shredded chicken with half of the enchilada sauce. Take one flour tortilla, fill it with the chicken mixture, and roll it up. Place seam-side down in a baking dish. Repeat with remaining tortillas.

    Add Sauce and Cheese

    Pour the remaining enchilada sauce over the rolled tortillas. Sprinkle shredded cheese on top. Bake in the preheated oven for 20 minutes or until the cheese is melted and bubbly.

    Cook the Eggs

    While the enchiladas are baking, cook the eggs to your preference (scrambled or fried). Season with salt and pepper.

    Once the enchiladas are done, serve them hot topped with cooked eggs and garnish with chopped cilantro. Serve with the crispy papitas on the side.
