Prepare the Filling
In a mixing bowl, combine the shredded chicken, ground beef, or carne adovada with diced onion, salt, pepper, and cumin. Mix well and set aside.

Heat the Tortillas
In a skillet, heat vegetable oil over medium heat. Lightly fry each tortilla for about 10 seconds on each side to make them pliable. Drain on paper towels.

Assemble the Enchiladas
Take a tortilla, fill it with a portion of the meat mixture and a sprinkle of cheese. Roll it up and place it seam-side down in a greased baking dish. Repeat with the remaining tortillas.

Add Sauce and Cheese
Pour enchilada sauce over the rolled tortillas in the baking dish, making sure they are well covered. Sprinkle the remaining cheese on top.

Bake
Preheat the oven to 350°F (175°C) and bake the enchiladas for 20-25 minutes or until the cheese is bubbly and golden.
