Preparation

    Prepare the Filling

    In a skillet, heat olive oil over medium heat. Add onions and sauté until translucent. Add ground beef, chicken, or carne adovada and cook until fully cooked. Season to taste with salt and pepper.

    Assemble the Enchiladas

    Preheat your oven to 375°F (190°C). Take each blue corn tortilla and fill it with the meat mixture, roll it up, and place it seam-side down in a baking dish. Repeat for all tortillas.

    Add Sauce and Cheese

    Pour enchilada sauce evenly over the rolled enchiladas. Sprinkle shredded cheese on top.

    Bake

    Cover the baking dish with foil and bake for 20 minutes. Remove foil and bake for an additional 10 minutes until cheese is bubbly.

    Prepare Egg (Optional)

    If adding an egg, you can either fry or poach it while the enchiladas are baking.

    Serve

    Remove the enchiladas from the oven. If desired, top with a fried or poached egg before serving. Enjoy your Enchilada Platter!
