Warm the Tortillas
In a dry skillet, warm the blue corn tortillas until pliable, about 30 seconds on each side.

Assemble the Enchiladas
Place a spoonful of each filling (beef, chicken, carne adovada) in the center of a tortilla, roll it up, and place it seam-side down in a baking dish.

Add Sauce
Pour the red and green enchilada sauces over the rolled enchiladas, ensuring they are well covered.

Add Cheese and Optional Egg
Sprinkle the shredded cheese on top. If you like, crack an egg on top of the enchiladas for additional richness.

Bake the Platter
Preheat oven to 375°F (190°C). Bake the enchiladas for about 20-25 minutes or until the cheese is melted and bubbly.
