Prepare the Enchiladas
In a skillet, heat oil over medium heat. Lightly fry each blue corn tortilla for about 10 seconds on each side until soft. Drain on paper towels.

Fill and Roll
Place about 1/3 cup of shredded cheese in the center of each tortilla. Roll them up tightly and place seam side down in a baking dish.

Add Sauce and Bake
Pour the enchilada sauce over the rolled tortillas. Cover with remaining cheese. Bake at 350°F (175°C) for 20-25 minutes until cheese is bubbly.

Serve
Once the enchiladas are done, remove from the oven. Top with sour cream, chopped cilantro, and the fried eggs (if using). Serve hot.
