Carne Adovada Preparation

    Prepare the Chilies

    Remove the stems and seeds from the dried red chilies. In a dry skillet over medium heat, toast the chilies for about 2-3 minutes until fragrant. Remove from heat and soak the chilies in hot water for 15 minutes until softened.

    Make the Marinade

    In a blender, combine the soaked chilies, garlic, cumin, oregano, salt, and pepper. Blend until smooth, adding a little soaking water as needed to achieve a smooth consistency.

    Marinate the Meat

    In a bowl, combine the cubed beef or chicken with the chili marinade. Allow it to marinate for at least 1 hour, preferably overnight in the refrigerator.

    Cook the Meat

    In a large pot, heat vegetable oil over medium-high heat. Add the marinated meat and brown on all sides. Once browned, add the chicken broth and bring to a simmer. Reduce the heat to low, cover, and cook for about 1.5 to 2 hours, or until the meat is tender.

    Warm the Tortillas

    While the meat is cooking, warm the flour tortillas in a dry skillet or directly over a flame until pliable.

    Once the carne adovada is tender, serve it hot with the warm tortillas on the side. Enjoy with your favorite toppings such as chopped onions, cilantro, or lime.
