    Prepare the Marinade

    Remove stems and seeds from the dried red chilies. Soak the chilies in hot water for about 15-20 minutes until softened. Blend the soaked chilies with garlic, ground cumin, oregano, vinegar, salt, and pepper until smooth.

    Marinate the Pork

    Cut the pork shoulder into 1-inch cubes. In a bowl, combine the pork with the chili marinade. Cover and marinate in the refrigerator for at least 2 hours or overnight for best flavor.

    Cook the Carne Adovada

    In a large pot, heat olive oil over medium heat. Add the marinated pork (discard the excess marinade) and brown the meat on all sides. Add a cup of water, cover, and reduce the heat to low. Simmer for about 1.5 to 2 hours, or until the pork is tender.

    Serve

    Once cooked, serve the Carne Adovada topped with shredded cheddar cheese. Accompany with a dollop of sour cream and calabacitas on the side.
