Method

Pork Chops Preparation

    Marinate Pork Chops

    In a bowl, mix the olive oil, salt, and black pepper. Rub this mixture on both sides of the pork chops. Let marinate for at least 30 minutes.

    Grill Pork Chops

    Preheat the grill to medium-high heat. Grill the marinated pork chops for about 5-6 minutes on each side, or until they reach an internal temperature of 145°F (63°C).

    Add Green Chile and Cheese

    In the last minute of grilling, top each pork chop with diced green chile and shredded cheese. Close the grill lid to melt the cheese.

Calabacitas Preparation

    Sauté Vegetables

    In a skillet, heat 1 tablespoon of olive oil over medium heat. Add diced onion and minced garlic, and sauté until translucent.

    Add Squash

    Add the diced zucchini and yellow squash to the skillet. Cook for about 5-7 minutes, stirring occasionally until tender. Season with salt and black pepper to taste.

Dinner Salad Preparation

    Prepare Salad

    In a large bowl, combine mixed greens, cherry tomatoes, and cucumber.

    Dress Salad

    Drizzle olive oil and balsamic vinegar over the salad. Season with salt and black pepper to taste, then toss gently to combine.

    Serve the grilled pork chops alongside the calabacitas and dinner salad. Enjoy your meal!
