    Prepare the Filling

    In a skillet, heat a little oil over medium heat. Add the diced onion and bell pepper, cooking until softened, about 5 minutes. Stir in the cooked Puerto Rican beans and cook for another 2-3 minutes until heated through.

    Assemble the Enchiladas

    Preheat the oven to 350°F (175°C). Take one corn tortilla and place a portion of the bean and vegetable mixture in the center. Roll up the tortilla and place it seam-side down in a baking dish. Repeat with the remaining tortillas.

    Add Sauce and Cheese

    Pour the red or green chile sauce over the rolled tortillas, ensuring they are well-covered. Sprinkle the shredded cheddar cheese on top.

    Bake

    Bake in the preheated oven for about 20 minutes, or until the cheese is melted and bubbly.

    Serve

    Serve the enchiladas hot, accompanied by calabacitas, Spanish rice, and a sopaipilla on the side.
