Prepare Carne Adovada
In a large pot, soak the dried red chile pods in hot water for about 20 minutes until softened. Remove stems and seeds, then blend with garlic, cumin, coriander, salt, and pepper until smooth. In the same pot, add cubed pork shoulder and cover with the blended sauce. Simmer on low heat for 2-3 hours until meat is tender.

Assemble Burrito
Once the carne adovada is ready, take a low-carb tortilla, fill it with a portion of the carne adovada, top with shredded cheese and roll it up tightly. Repeat with remaining tortillas.

Serve
Place the rolled burritos on a plate, drizzle with green chile sauce, and serve alongside calabacitas.
