Prepare the Sauce

In a large skillet over medium heat, heat the olive oil. Add the onion, carrot, and celery, and sauté until softened, about 5-7 minutes.

Cook the Meat

Add the minced garlic to the skillet and cook for 1 minute. Then, add the ground veal and pork, breaking it up with a spatula. Cook until browned, about 8-10 minutes.

Pour in the red wine, scraping the bottom of the skillet to release any browned bits. Allow it to simmer for 2-3 minutes until slightly reduced.

Add Tomatoes and Broth

Stir in the crushed tomatoes and beef broth. Season with salt and black pepper to taste. Bring to a simmer, then reduce heat to low and let it cook for 30-40 minutes, stirring occasionally.

Cook the Pasta

While the sauce is simmering, cook the fresh pappardelle according to package instructions in a large pot of salted boiling water. Drain and set aside.
