Prepare the Goat Cheese

Divide the goat cheese into 12 equal portions and roll each portion into a ball.

Coat the Fritters

Set up a breading station with three shallow bowls: one with flour, one with beaten eggs, and one with a mixture of breadcrumbs, chopped pecans, salt, and pepper. Roll each goat cheese ball first in flour, then dip in the egg, and finally coat with the breadcrumb-pecan mixture.

Heat the cooking oil in a deep skillet over medium heat. Once hot, carefully add the fritters in batches and fry until golden brown on all sides, about 4-5 minutes. Remove and drain on paper towels.
