Make the Dough
In a large mixing bowl, combine warm water, sugar, and yeast. Let it sit for about 5 minutes until frothy. Add melted butter, salt, and flour. Mix until a dough forms.

Knead the Dough
Turn the dough out onto a floured surface and knead for about 5-7 minutes until smooth and elastic. Place in a greased bowl, cover, and let rise in a warm place for 1 hour.

Shape the Pretzel Knots
Preheat the oven to 425°F (220°C). Once the dough has risen, punch it down and divide it into 12 equal pieces. Roll each piece into a long rope and shape into a knot.

Boil the Knots
In a large pot, bring water to a boil and add 1/4 cup baking soda. Boil each knot for about 30 seconds, then remove and place on a baking sheet lined with parchment paper.
