    Prepare the Duck Liver Pâté

    In a skillet, melt the duck fat and butter over medium heat. Add the shallots and garlic, and sauté until soft. Add the duck liver, thyme, salt, and pepper. Cook until the liver is just cooked through, about 5 minutes.

    Blend the Mixture

    Transfer the mixture to a food processor and blend until smooth. If needed, add a bit more duck fat to achieve a creamy consistency. Let it cool, then refrigerate until set.

    Prepare the Baguette

    Slice the baguette into 1 cm thick slices. Brush both sides with olive oil and toast in a preheated oven at 200°C (400°F) until golden and crisp, about 5-7 minutes.

    Spread a generous amount of the duck liver pâté on each toasted baguette slice. Top with a few slices of duck prosciutto and a small amount of pickled red onion.
