Prepare the Grits

In a medium pot, bring the chicken broth to a boil. Slowly whisk in the grits, reduce the heat to low, and simmer for about 20-25 minutes, stirring occasionally, until thickened. Stir in the cheddar cheese and butter until melted and well combined. Season with salt and pepper to taste. Keep warm.

Cook the Mustard Greens

In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped mustard greens and sauté for about 5-7 minutes until wilted. Season with salt and pepper. Remove from skillet and set aside.

Make the Tomato Gravy

In the same skillet, add another tablespoon of olive oil. Sauté the chopped onion and minced garlic until softened, about 3-4 minutes. Add the diced tomatoes and cajun seasoning, cooking for another 5 minutes until heated through. Set aside.

Cook the Shrimp

In the skillet, add the shrimp and cook for 3-4 minutes until they turn pink and opaque. Season with additional salt and pepper if needed.

Serve

To serve, place a generous scoop of cheddar cheese grits on each plate, top with shrimp, and spoon over the tomato gravy. Add sautéed mustard greens on the side and garnish with sliced green onions.
