Make the Broth
In a large pot, combine chicken broth, soy sauce, mirin, minced garlic, grated ginger, and chopped green onions. Bring to a simmer over medium heat and let it cook for 15-20 minutes to allow the flavors to meld.
Cooking the Noodles and Toppings

Prepare the Noodles
In a separate pot, bring water to a boil. Add the fresh ramen noodles and cook according to package instructions (usually about 3-4 minutes). Drain and set aside.

Assemble the Ramen
In a large bowl, place a serving of noodles. Pour the hot broth over the noodles. Top with sliced chashu, sautéed shiitake mushrooms, soft-boiled eggs, nori sheets, and a sprinkle of toasted sesame seeds. Garnish with additional chopped green onions if desired.
