Prepare Chashu

    Cook the Pork

    In a large pot, combine soy sauce, mirin, sake, sugar, garlic, and ginger. Bring to a simmer. Add the pork belly and simmer for about 2 hours, turning occasionally, until the pork is tender.

    Cool and Slice

    Remove the pork from the pot and let it cool. Once cooled, slice the pork into 1/4 inch thick pieces. Reserve the cooking liquid.

    Prepare Green Onions

    Chop the green onions finely for garnish.

Cook Rice

    Rinse and Cook Rice

    Rinse the rice under cold water until the water runs clear. Combine the rinsed rice and water in a rice cooker or pot and cook according to the rice cooker instructions or bring to a boil, then cover and reduce heat to low, cooking for about 18-20 minutes.

Assemble

    Serve

    Once the rice is cooked, fluff it with a fork. Serve the rice topped with the sliced chashu and garnish with chopped green onions. Drizzle some reserved cooking liquid over the top if desired.
