Broth Preparation

Make the Broth

In a large pot, add the pork bones and cover with water. Bring to a boil and then reduce to a simmer. Skim off any scum that forms on the surface.

Add Aromatics

After 10 minutes, add the onion, garlic, and ginger to the pot. Continue to simmer for 12-18 hours, adding more water if necessary to keep the bones submerged.

Season the Broth

Once the broth is rich and creamy, strain out the solids and return the liquid to the pot. Stir in soy sauce and mirin to taste.

Cook the Noodles

In a separate pot, boil water and cook the ramen noodles according to package instructions. Drain and set aside.

Prepare Toppings

Slice the chashu pork, and chop the green onions. Soft boil the eggs (about 6-7 minutes), then peel and slice in half.

Serve the Ramen

In a bowl, place a serving of noodles, ladle over the hot tonkotsu broth, and top with chashu, soft-boiled eggs, green onions, and nori sheets.
