    Prepare the Pork Chashu

    In a pot, combine pork belly, soy sauce, ginger, garlic, and water. Bring to a boil, then reduce to a simmer and cover. Cook for 2-3 hours until tender. Remove pork and let it rest before slicing.

    Make the Miso Broth

    In a large pot, heat sesame oil over medium heat. Add ginger and garlic, sauté until fragrant. Pour in dashi stock and bring to a simmer. Whisk in miso paste until dissolved. Let it simmer for 20 minutes.

    Cook Ramen Noodles

    In a separate pot, boil water and cook the fresh ramen noodles according to package instructions. Drain and set aside.

    Assemble the Ramen Bowl

    In a bowl, place a serving of ramen noodles, pour the miso broth over the noodles, and top with sliced pork chashu, chopped green onions, and menma.
