Mochi Preparation

    Make the Mochi Dough

    In a microwave-safe bowl, combine sweet rice flour and sugar. Gradually add water and mix until smooth. If using food coloring, add it now.

    Cook the Dough

    Cover the bowl with plastic wrap and microwave on high for 1 minute. Stir, then microwave for another 1 minute. Stir again and microwave for an additional 30 seconds until the dough is sticky and slightly translucent.

    Cool and Knead

    Dust a clean surface with cornstarch and transfer the mochi dough. Allow it to cool slightly, then knead for a few minutes until smooth.

Assembling Mochi Ice Cream

    Shape the Mochi

    Divide the mochi dough into small pieces (about 2-3 tablespoons each). Flatten each piece into a round disc.

    Fill with Ice Cream

    Scoop a small amount of ice cream onto the center of each mochi disc. Carefully fold the edges over the ice cream, pinching to seal it completely.

    Freeze

    Place the filled mochi on a baking sheet lined with parchment paper and freeze for at least 2 hours until firm.
