House Brined Chicken

Prepare the Brine
In a large bowl, combine water, salt, brown sugar, black peppercorns, garlic cloves, and thyme sprigs. Stir until salt and sugar are fully dissolved.

Brine the Chicken
Submerge the chicken breasts in the brine mixture, cover, and refrigerate for at least 2 hours or up to 8 hours.

Cook the Chicken
Preheat your grill or oven to 375°F (190°C). Remove the chicken from the brine, pat dry, and cook until fully cooked (165°F/75°C). Let rest before slicing.
Ginger Pickled Red Onions

Prepare the Pickling Liquid
Peel and slice the ginger root. In a saucepan, combine rice vinegar, sugar, and salt. Bring to a simmer until the sugar and salt are dissolved.

Roasted Red Pepper

Roast the Peppers
Preheat the oven to 450°F (232°C). Cut the red bell peppers in half, remove seeds, and place them on a baking sheet.

Season and Bake
Drizzle olive oil and sprinkle salt over the peppers. Roast in the oven for 25-30 minutes, or until the skin is charred and blistered. Remove and let cool before peeling.
Tikka Masala Sauce Base

Sauté Aromatics
Chop the onion, garlic, and ginger. In a large skillet, heat oil over medium heat and sauté the onion until translucent. Add garlic and ginger, and sauté for 1-2 minutes.

Add Tomatoes and Spices
Stir in canned tomatoes, coconut milk, Tikka Masala spice blend, and salt. Simmer for 15-20 minutes until slightly thickened.

Finish the Sauce
Chop cilantro and stir into the sauce. Adjust seasoning as needed.
