Chicken Brining

    Prepare the Brine

    In a medium bowl, combine water, salt, and sugar until dissolved.

    Brine the Chicken

    Submerge the chicken breasts in the brine for at least 1 hour in the refrigerator.

Creamy Avocado Sauce

    Blend the Sauce

    In a blender, combine ripe avocados, Greek yogurt, lime juice, garlic, salt, and black pepper. Blend until smooth and creamy.

Roasted Red Peppers

    Roast the Peppers

    Preheat the oven to 400°F (200°C). Slice the red bell peppers in half, remove the seeds, and drizzle with olive oil and salt. Place them on a baking sheet and roast for 20-25 minutes until charred.

    Cool and Slice

    Once roasted, let the peppers cool, then slice into strips.

Garlicky Chimichurri Drizzle

    Prepare the Chimichurri

    In a food processor, combine parsley, garlic, red wine vinegar, olive oil, red pepper flakes, and salt. Pulse until finely chopped and well mixed.

Minced Jalapenos

    Finely mince the jalapenos, removing seeds for less heat if desired.

Cook Chicken and Assemble

    Remove the chicken from brine, rinse, and pat dry. Grill or pan-sear over medium heat for 6-8 minutes on each side until fully cooked.

    Slice the cooked chicken and serve on a plate. Top with creamy avocado sauce, roasted red pepper strips, minced jalapenos, and drizzle with chimichurri.
