Stuffed Hash Browns Recipe
Go egg-less! Sauté the ingredients and throw it in a Hash Brown and melt it all together with cheese.

Preparation
Sauté the Vegetables
In a large skillet, heat the olive oil over medium heat. Add the diced bell pepper and onion, and sauté for about 5 minutes until softened. Add the minced garlic and spinach, cooking for an additional 2-3 minutes until the spinach is wilted. Season with salt and black pepper. Remove from heat and set aside.
Prepare the Hash Browns
In a separate skillet, heat a little oil over medium-high heat. Add half of the frozen hash browns, pressing them down to form a large patty. Cook for about 5-7 minutes until golden brown and crispy, then flip and cook the other side until crispy. Remove from the skillet and repeat with the remaining hash browns.
Assemble the Stuffed Hash Browns
On one hash brown patty, layer half of the sautéed vegetable mixture and top with half of the cheddar cheese. Place a second hash brown on top and press down gently.
Melt the Cheese
Return the stuffed hash brown to the skillet and cook on medium heat for about 3-4 minutes until the cheese is melted and the bottom is crispy. Carefully flip the stuffed hash brown and cook for another 3-4 minutes.
Serve
Slice the stuffed hash browns into wedges, serve hot with optional sour cream on the side.
