Prepare the Brisket

In a large pot, cover the brisket with water and bring to a boil. Reduce heat and simmer for about 3 hours until tender. Once cooked, remove brisket and let cool. Reserve the broth.

Chop the Ingredients

Dice the brisket into small cubes. Peel and dice the potatoes into small cubes. Chop the green onions.

Cook the Potatoes

In a skillet, heat olive oil over medium heat. Add the diced potatoes, salt, and black pepper. Cook for about 10-12 minutes until they are golden and tender.

Combine and Cook

Add the diced brisket and chopped green onions to the skillet with the potatoes. Stir well and cook for an additional 5-7 minutes until heated through and slightly crispy.

Fry the Eggs

In another skillet, fry the eggs to your liking (sunny-side up or over-easy).

Serve

Divide the corned beef hash onto plates, top with fried eggs, and serve with hash browns or rice on the side.
