Prepare the Egg Mixture
In a mixing bowl, whisk together eggs, milk, salt, and pepper until fully combined.
Sauté the Vegetables
In a non-stick skillet, melt butter over medium heat. Add the diced bell peppers and onion, and sauté for about 3-4 minutes until softened. Add the chopped spinach and cook for another 1-2 minutes until wilted.
Add Cheese and Fold
When the omelet is mostly set but still slightly runny on top, sprinkle shredded cheddar cheese over one half of the omelet. Carefully fold the other half over the cheese and cook for an additional 1-2 minutes until the cheese is melted and the omelet is cooked through.
Serve
Slide the omelet onto a plate and serve immediately with your choice of rice, hash browns, or toast.
