Cook the Sausage
In a large pot or Dutch oven, heat the vegetable oil over medium heat. Add the Andouille sausage and cook until browned, about 5-7 minutes. Remove from the pot and set aside.

Cook the Chicken
In the same pot, add the chicken thighs and cook until browned and cooked through, about 8-10 minutes. Remove and set aside with the sausage.

Make the Roux
Add the chopped onions, bell pepper, celery, and garlic to the pot. Cook until softened, about 5 minutes. Stir in the Cajun seasoning. Then, sprinkle in flour (if desired for a thicker sauce) and stir continuously until the roux is light brown.

Add Liquids
Stir in the chicken broth and tomato paste, scraping the bottom of the pot to deglaze. Return the sausage and chicken to the pot.

Bring the mixture to a simmer. Reduce heat and let it simmer for about 20 minutes. Adjust seasoning with salt and black pepper.

Serve the étouffée over cooked white rice, and garnish with sliced green onions and chopped parsley.
