New Orleans Style Po-boy Recipe
Fried shrimp, oyster, catfish or hot sausage boiled high atop lettuce, tomato and pickle. All on New Orleans French bread. Served with a side of French fries.

Preparation and Assembly

Prepare the Shrimp and Oysters
In a bowl, soak the shrimp and oysters in buttermilk for at least 30 minutes. This helps to tenderize and flavor the seafood.

Prepare the Catfish and Sausage
If using catfish and sausage, cut the sausage into patties and season with salt, black pepper, and cayenne pepper.

Breading the Seafood
In a shallow dish, mix the flour, cornmeal, salt, black pepper, and cayenne pepper. Dip the buttermilk-soaked shrimp and oysters in the flour mixture, ensuring they are well coated.

Fry the Seafood
Heat the vegetable oil in a deep skillet to 350°F (175°C). Fry the breaded shrimp and oysters in batches until golden brown, about 3-4 minutes. Remove and drain on paper towels.

Fry the Catfish and Sausage
In the same oil, fry the catfish fillets and sausage patties until cooked through and golden brown, about 4-5 minutes for catfish and 3-4 minutes for sausage.

Assemble the Po-Boy
Slice the French bread in half lengthwise and layer with lettuce, tomato, pickles, and the fried seafood or sausage of choice. Drizzle with hot sauce if desired.

Serve the Po-Boy with a side of French fries.
