Cooking Instructions

  1. 1

    Prepare the Grits

In a saucepan, bring 4 cups of water to a boil. Add salt to taste. Slowly whisk in the grits and reduce heat to low. Cover and cook for about 20 minutes, stirring occasionally until thickened.

  2. 2

    Add Cheese

Once the grits are cooked, stir in the Asiago cheese until melted and creamy. Keep warm.

  3. 3

    Prepare the Fish

Season the catfish fillets with salt, black pepper, and Cajun seasoning. Dredge each fillet in cornmeal, ensuring an even coating.

  4. 4

    Fry the Fish

In a skillet, heat olive oil over medium heat. Add catfish fillets and cook for about 4-5 minutes on each side, or until golden brown and cooked through. Remove from the skillet and drain on paper towels.

  5. 5

    Make the Cajun Cream Sauce

In the same skillet, add heavy cream and additional Cajun seasoning if desired. Stir and let simmer for about 5 minutes until slightly thickened.

  6. 6

    Plate the Dish

Spoon a generous amount of Asiago cheese grits onto each plate. Top with fried catfish and drizzle with Cajun cream sauce. Garnish with chopped green onions.

  7. 7

    Serve

Serve warm with a side salad.
