    Sauté the Meat

    In a large pot, heat olive oil over medium heat. Add the Andouille sausage and cook until browned. Add the diced chicken and cook until no longer pink. Stir in shrimp and cook until pink and opaque. Remove the meat mixture and set aside.

    Cook the Vegetables

    In the same pot, add the chopped onion, bell peppers, and minced garlic. Sauté until softened, about 5 minutes.

    Add the Liquids

    Stir in the canned diced tomatoes, chicken broth, Cajun seasoning, bay leaves, salt, and pepper. Bring to a boil.

    Add Rice

    Add the rice to the pot, stir well, reduce heat to low, cover, and simmer for about 20 minutes or until rice is cooked.

    Combine and Serve

    Once the rice is cooked, return the meat mixture to the pot, stirring to combine. Remove bay leaves and serve hot with French bread and house salad.
