Prepare the Étouffée
In a large skillet, heat the butter and vegetable oil over medium heat. Add the onion, bell pepper, celery, and garlic. Sauté until the vegetables are soft and translucent, about 5 minutes.

Add Seasonings
Stir in the Cajun seasoning and tomato paste, cooking for an additional 2 minutes until fragrant.

Simmer the Mixture
Pour in the chicken or seafood stock and add the bay leaves. Bring to a simmer, then reduce heat to low and let it cook for about 15 minutes, stirring occasionally.

Add Crawfish or Shrimp
Add the crawfish or shrimp to the pot, cooking for another 5-7 minutes until fully cooked. Season with salt and black pepper to taste.

Prepare the Salad
In a bowl, combine the lettuce, diced tomatoes, and sliced cucumber. Drizzle with olive oil and vinegar, tossing to coat.

Serve the étouffée over steamed rice with French bread on the side and the salad as a refreshing accompaniment.
