1. Prepare the Marinade
In a medium bowl, mix together the diced mango, chopped habanero, honey, soy sauce, lime juice, minced garlic, salt, and black pepper to create the marinade.
2. Marinate the Chicken
Place the chicken thighs in a large zip-top bag or a shallow dish. Pour the marinade over the chicken, making sure each piece is well coated. Seal the bag or cover the dish, and marinate in the refrigerator for at least 1 hour, or up to overnight for best flavor.
3. Preheat the Grill
Preheat your grill to medium-high heat and lightly oil the grates with olive oil.
